  • What is your favorite thing to do when you travel? ⁣
I know that seems like a random question given the current context...but what do you miss most about traveling?⁣
⁣
Personally, my favorite thing when I travel is to eat local food (duh). I don't really care about museums or monuments, as I feel that you really get the sense of a country and its people when you're sitting at a table with them. ⁣
⁣
The local food, spices, wine, and the way people eat is something that I studied extensively at University (my degrees are in Culinary Anthropology). ⁣
⁣
I find it fascinating how in countries like France, Italy, and Spain, you can travel just a few kilometers, and the entire culinary landscape changes drastically.⁣
⁣
For example, I thought I always hated Brie. And don't get me wrong, I've eaten some amazing Brie in fancy Parisian restaurants and bought some of the best I could find at MOF cheese shops....but nothing changed my mind more than when I moved to Fontainebleau (a mere 60 km from Paris) and tried the local Brie. 🤯⁣

Now, Brie is my absolute favorite cheese, and I've braved confinement, rain, ice, hail, and heatwaves to stand for hours in line at the local market to buy this totally INSANE Brie from a local 'affineur'. Is it worth it? ⁣

I'll let you be the judge of that!
  • 𝗖𝗢𝗡𝗙𝗘𝗦𝗦𝗜𝗢𝗡: 😱 I have this thing with madeleines. 
When I first arrived in Paris over 10 years ago, I didn’t speak a word of French. On my first day here, I went down to my fancy Parisian neighborhood bakery in the 16th arrondissement. I saw these beautiful, warm madeleines nestled cozily in a little basket. The name brought up fond memories of the book ‘Madeleine’ that I used to read when I was little. After taking my first bite I knew it was going to be a life-long love affair. 

Since then, I’ve tried pretty much every single recipe for madeleines that I could get my hands on. 

Over the years, I’ve ended up with a version that’s pretty much flawless. But what I really love is playing with the recipe and experimenting with different versions, just like this one! 

Here I made savory mini-madeleines with a bunch of fresh herbs and served them with a horseradish cream dipping sauce. These mini madeleines are perfect for apero (trust me, I brought them to like the next 5 aperos I went to after creating this recipe!).

This recipe also gave me the chance to test out my new mini-madeleine mold by @silpat_fr. It was the first time I made madeleines in a silicone tray and I've got to say that wow, it was like driving the Ferrari of pastry trays! (Does that make any sense?) 🚗

My first time making my own chili oil. ⁠⁣
Inspired by a recipe that @thesocialfood posted during confinement, I've got to say this baby has become another staple in my house. It's amazing how having a standing rotation of a few flavor-packed, homemade condiments, pickles and oils can upgrade the simplest meal from blah to banging. They used this oil as a base for an Asian vinaigrette dressing with Szechuan pepper (🤤), but I've been using it as-is on just about everything! Have you ever made chili oil from scratch before? It beats any store-bought kind a million times over! Want the recipe? 🌶🌶🌶⁠

Seriously, consider this me taking care of you, because honestly I'm just trying to get you to eat more vegetables! 🥕🥕🥕 ⁠⁣
And in the spirit of honestly, I will tell you that:⁠⁣
-I didn't think anyone in my house would like this recipe⁠⁣
-I intended on giving the entire cake to someone who loves carrot cake⁠⁣
-Turns out everyone loved the cake (except for the frosting, what is wrong with my kids?!?!)⁠⁣
-I was only able to give a slice to my friend because everyone tore through this cake so fast that I had to actually hide her slice⁠⁣

  • What do you think when see you multiple ingredients from various countries in the same recipe? Faux pas, or fo-sho? (That means 'for sure' for my less gangsta readers)....

Coming from a very culturally-confused background means that personally, I'm very used to seeing zaatar, sumac, or pomegranate molasses coexisting happily next to feta or basmati or chapatis. That's what happens when you have a food-crazy family who comes from and lives all around the world. Nothing shocking here! 

But I know that for some, there are major faux pas that shouldn't be committed when it comes to eating and cooking. 

For Italians, it's putting Parmesan on any pasta that has seafood in it. For the French, it's spreading foie gras with a knife. For others, it's mixing various strange ingredients together that don't really seem to belong.

But oh do they belong together in this braised beef recipe (here I used French Paleron) that combines soy sauce, honey, cinnamon, Mexican chiles, ginger, fish sauce, and more into a flavor-bomb sauce that will rock your world. Thank you Alison Roman once again for a life-changing recipe. This broth (the beef too, but the BROTH!!!!!) has taken my tastebuds to places I didn't know they could go. Swoon.

I find that New Year's resolutions never work, not because we're not motivated, but because life gets in the way of doing absolutely everything you dream of doing when you're drunk on Champagne on New Year's Eve...🍾⁣

That said, I have decided to try to be kinder to myself, which involves 2 things:⁣

1. Not feeling guilty about eating delicious, somewhat fatty, or carb-loaded food.⁣
2. Continuing to try to develop healthier versions of recipes that I love, like these healthy blueberry muffins that have whole-wheat flour, coconut sugar, coconut oil and Greek yogurt.⁣

Ceci dit, moi j'ai decide d'etre plus gentille avec moi meme, ce qui inclut d'essayer de faire des versions plus saine des recettes que j'adore, comme par exemple ses muffins a la myrtille avec de la farine semi-complete, du sucre de coco, de l'huile de coco et du yaourt Grec !⁣
