I don’t know about you, but I love oatmeal. That’s why I’m constantly looking for new ways to prepare oatmeal that isn’t just plain, old, boring oatmeal. As a mom of two who’s currently homeschooling during yet another pandemic lockdown in France, I have very little time for breakfast, which is why I’m always trying to maximize my time and batch cook as much as possible!

These vegan baked oatmeal cups are one of my favorite ways to have oatmeal, especially when you’re in a hurry! I added apples and pecans because that’s what I had on hand, but there are so many ways to make this recipe your own.

So what exactly is in them? Essentially, they’re free of dairy, gluten, and refined sugar. That makes them vegan, dairy-free, gluten-free, and refined-sugar free. Also, they’re a perfect breakfast for an Ayurvedic diet, as in Ayurveda you’re not supposed to mix milk and fruit, but here it’s almond milk so we’re good! Otherwise, they’ve got oats, apple sauce, cinnamon, coconut oil, and other healthy ingredients.

Why these vegan oatmeal cups are the perfect breakfast:

  • I like to make a double batch of these, and then once they’ve cooled I pop the leftovers in the freezer. Then, all you need to do is take out 1 or 2 (or 3?) portions and pop them in the microwave to heat them up.
  • A fresh batch keeps in the fridge for about 4-5 days, meaning you’ve got breakfast ready for quite a few days in advance.
  • You can serve them with so many different delicious things: try fresh fruit, peanut butter (my personal favorite), apple butter, almond butter, or even break them up with a fork and add a splash of almond milk if you’d like.

How can I personalize these vegan baked oatmeal cups?

  • Grate the apples instead of cutting them into chunks if you’d rather have the apple blend in more
  • Swap the apples for mashed or cut banana
  • Add chocolate chips or do a banana/chocolate chip variation
  • Add more apple or banana chunks on top of each cup before baking
  • Use whatever nuts you like if you don’t have pecans: try walnuts, hazelnuts, or cashews. Or swap the nuts if you’re allergic or just not a huge fan of nuts.

Ingredients

  • 100 g oats
  • 240 ml almond milk unsweetened
  • 1 tsp coconut oil melted (so that it's not solid)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 90 g apple sauce
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 1 or 2 tbsp maple syrup according to your taste
  • 1 tbsp linseeds or flax seeds
  • pecans crushed in a mortar and pestle (adjust the amount to your liking!)
  • 1/2 apple cut into very small cubes (adjust the amount to your liking!)

Instructions

  • Preheat the oven to 170C fan oven/ 180C normal oven.
  • Mix all of the ingredients together in a big bowl.
  • Grease a muffin tin.
  • Spoon the batter into the muffin cups. Bake for 30-35 minutes or until a toothpick comes out clean. Let cool for 5 minutes in the muffin tray before removing onto a cooling rack.

Je crois que je suis une des rares personnes qui adorent manger des flocons d’avoines chaudes pour le petit déjeuner. Mais comme je commence à en avoir un peu marre de manger toujours la même chose, je suis toujours a la recherche de recettes ou je peut twister les flocons d’avoine et les rendre un peu plus originales.

Voici donc une recette avec des flocons d’avoine, de la pomme, et des epices, préparée dans un moule a muffins. La recette est végane, sans lait, sans huile, sans gluten, et parfaite si vous suivez une alimentation Ayurvédique. Ce que j’adore c’est que vous pouvez varier cette recette selon vos goûts, et que vous pouvez la doubler pour ensuite en congeler. Comme ca, vous avez que a sortir 2 ou 3 portions du congélateur, les mettre au micro onde, et voilà le petit dejeuner est pret !

Pour personnaliser la recette, n’hésitez pas à remplacer les noix de pécan avec, par exemple, des noix ou des noisettes. Vous pouvez aussi faire une version banane/pépites de chocolats. La base de la recette est la, a vous de la changer selon vos envies !

La recette des ‘muffins’ vegane aux flocons d’avoines, pomme, et noix de pecan

Ingredients pour 9 muffins

  • 100 g flocons d’avoine
  • 240 ml lait d’amande (sans sucres)
  • 1 càc huile de coco (fondu)
  • 1/2 càc levure chimique
  • 1 càc cannelle
  • 1 càc extrait de vanille
  • 90 g compote de pomme
  • Une pincée de sel
  • 1 ou 2 càs de sirop d’érable (en fonction de vos goûts)
  • 1 cas graines de lin
  • des noix de pecan (ajustez la quantité en fonction de vos goûts), écrasées dans un mortier
  • 1/2 pomme, coupée en tout petits cubes (ajustez la quantité en fonction de vos goûts)

Procedure

  • Préchauffez le four à 170C (chaleur tournante).
  • Mélangez tous les ingrédients ensemble dans un grand bol.
  • Huiler un moule à muffins.
  • Avec l’aide d’une cuillère, mettez de la pâte dans chaque moule. Enfournez pour environ 30-35 minutes, ou jusqu’à ce que un couteau insérée au centre d’un muffin ressort sec. Une fois cuits, laissez refroidir 5 minutes avant de démouler sur un grille.
