Ingredients

  • 100 g oats
  • 240 ml almond milk unsweetened
  • 1 tsp coconut oil melted (so that it's not solid)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 90 g apple sauce
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 1 or 2 tbsp maple syrup according to your taste
  • 1 tbsp linseeds or flax seeds
  • pecans crushed in a mortar and pestle (adjust the amount to your liking!)
  • 1/2 apple cut into very small cubes (adjust the amount to your liking!)

Instructions

  • Preheat the oven to 170C fan oven/ 180C normal oven.
  • Mix all of the ingredients together in a big bowl.
  • Grease a muffin tin.
  • Spoon the batter into the muffin cups. Bake for 30-35 minutes or until a toothpick comes out clean. Let cool for 5 minutes in the muffin tray before removing onto a cooling rack.
