Cauliflower miso soup

Ingredients

  • 1/2 medium-sized cauliflower
  • 1/2 onion
  • 1 tbsp vegetable oil
  • 250 ml almond milk
  • 1 tsp white miso paste

Instructions

  • Chop the onion and sautee in the oil on medium heat for a few minutes, until transparent.
  • Cut the cauliflower into florets, add to the pot with the onion, and sautee for 1 minute.
  • Add the almond milk, and top with however much water is needed to make sure that the vegetables are fully submerged.
  • Simmer for 20-30 minutes, or until the cauliflower is fully cooked.
  • Add the miso paste, then blend until you have a smooth, silky soup with no lumps.
  • Top with sesame seeds and homemade chili oil.
