Cauliflower miso soup
A delicious cream of cauliflower soup with white miso (gluten-free, dairy-free, vegan)

Ingredients

medium-sized cauliflower
1/2
onion

tbsp
vegetable oil
250
ml
almond milk

tsp
white miso paste
Instructions
Chop the onion and sautee in the oil on medium heat for a few minutes, until transparent.
Cut the cauliflower into florets, add to the pot with the onion, and sautee for 1 minute.
Add the almond milk, and top with however much water is needed to make sure that the vegetables are fully submerged.
Simmer for 20-30 minutes, or until the cauliflower is fully cooked.
Add the miso paste, then blend until you have a smooth, silky soup with no lumps.
Top with sesame seeds and homemade chili oil.
